Albóndigas - ("meatballs" in Spanish) are found in Sopa de Albondigas, a Mexican food dish. The meatballs have rice in them and the broth is usually chicken. Vegetables such as onion, carrots and seasonings such as cilantro and garlic are often used. |

Burrito - is a Mexican dish usually consisting of a meat such as beef, chicken, or pork wrapped in a flour tortilla. In northern Mexico, the only region of Mexico in which burritos are generally found the meat is usually the only filling, and the burrito is rolled fairly thin. |

Chilaquiles - is a traditional Mexican dish consisting of fried tortilla chips, bathed in green or red salsa or mole. and broiled or grilled with a cheese topping. Sometimes chicken strips are mixed into the sauce, or the dish can be served with a fried egg on top or a strip of meat alongside. |

Chile relleno - literally "stuffed chile", is a dish of Mexican cuisine, consisting of a roasted green New Mexico or poblano chile pepper stuffed with cheese (or more rarely minced meat, although traditionally queso fresco), covered in an egg batter, and fried. It is usually served covered with a sauce, although the type of sauce varies widely. It is sometimes also served in a taco with rice, salsa and other toppings. |

Enchilada - is a traditional Mexican dish. Enchilada comes from the verb enchilar (= "to add chile pepper to"). Enchilada literally means "seasoned with chiles". The traditional enchilada sauce is just that—dried red chile peppers soaked and ground into a sauce with other seasonings. |

Huevos Divorciados - or "Divorced Eggs," is a Mexican breakfast featuring two fried eggs separated by a column of chilaquiles (although sometimes, refried beans with tortilla chips are substituted). Typically, one egg is covered in salsa roja, while the other is covered in salsa verde, giving them distinctly different and complementary flavors. |

Huevos rancheros - is a classic Mexican breakfast dish which has become popular throughout much of the Americas. The basic version of huevos rancheros consists of corn tortillas fried lightly, and fried eggs with a tomato–chili sauce. Refried beans (frijoles refritos), slices of avocado, fried potatoes, and extra chili peppers are common accompaniments. Scrambled eggs can be used instead of fried eggs. |

Machaca - or machacado is a Mexican dish of shredded beef (often dried), and sometimes cooked with eggs, onions and chile peppers (with some regional and economic variations). It is also served in as a taquito, burrito, torta, or a plate with beans and rice. The name Machaca is used in the Southern part of Mexico and in the northwestern state of Sonora, and 'Machacado' in the North where it originated. |

Taco - is a traditional Mexican dish comprised of a rolled or folded, pliable maize tortilla filled with an edible substance. Authentic Mexican taquerías (taco vendors or restaurants) sell tacos made with many kinds of meat, including stomach, head, and liver meat from cattle. |

Tostada - is a r flat tortilla that is toasted or deep fried.
